
Protein chocolate mousse
A light, high-protein chocolate mousse made with fromage blanc and cocoa. Guilt-free dessert.

Mix the fromage blanc, chocolate whey, cocoa and honey in a bowl. Whisk until smooth.

In a separate bowl, whip the egg whites with the pinch of salt until stiff peaks form.

Gently fold the whipped whites into the chocolate mix in 3 stages, lifting the mixture so as not to deflate the whites.

Divide between 2 glasses or ramekins.

Refrigerate for at least 2 hours.

Serve well chilled, dusted with a little cocoa.
Tips
- The longer the mix sits in the fridge, the airier the texture.
- Use an electric mixer for perfect stiff peaks.
- Add 85% dark chocolate chips for an extra indulgent touch.
Variations
- Caramel version: swap the cocoa and whey for caramel whey and add zero-calorie caramel syrup.
- Fruit version: swap the cocoa for strawberry whey and add fresh strawberries.
