
Date, almond & coconut energy balls

Roughly blend the almonds in a food processor.

Add the dates, cocoa, rolled oats, coconut oil and salt. Blend until you get a sticky dough.

If the mixture is too dry, add a tablespoon of water.

Shape into walnut-sized balls (around 12 balls).

Roll each ball in the shredded coconut.

Refrigerate for at least 30 minutes before eating.
Tips
- Store the energy balls in an airtight container in the fridge for up to a week.
- For a protein boost, add 20g of whey to the mix.
- Medjool dates are softer and sweeter than regular dates.
Variations
- Peanut butter version: swap the cocoa for 30g of peanut butter.
- Tropical version: add dried mango and cashews.
