    Roughly blend the almonds in a food processor.

    Add the dates, cocoa, rolled oats, coconut oil and salt. Blend until you get a sticky dough.

    If the mixture is too dry, add a tablespoon of water.

    Shape into walnut-sized balls (around 12 balls).

  5. 5

    Roll each ball in the shredded coconut.

    Refrigerate for at least 30 minutes before eating.

Tips

  • Store the energy balls in an airtight container in the fridge for up to a week.
  • For a protein boost, add 20g of whey to the mix.
  • Medjool dates are softer and sweeter than regular dates.

Variations

  • Peanut butter version: swap the cocoa for 30g of peanut butter.
  • Tropical version: add dried mango and cashews.
